The Selection
It's the holiday time of year, which means lots of food to be followed by resolutions of Diet and weight loss that fade away quickly. Instead of relying on regimented diet plans, let's spend some time looking at healthy recipes that can be made at home using healthy ingredients.
I tried searching online for popular diets. The DASH diet rose to the top. It's interesting to see that this is not a weight loss diet plan, but a diet recommended for people with hypertension or prehypertension. It is based on meals consisting of fruits, vegetables, whole grains, and lean meats, fish, and poultry. I decided to start out with chicken.
A general whittlerz.com search for chicken breast, pasta, and vegetables resulted in over 500 recipes. The Country French Chicken included vegetables I have not ordinarily used, so I thought I would give it a try.
I could not find fresh tarragon at the store (I tried a couple). I ended up using dried tarragon. Not sure how much this changes the overall taste.
Overall, cooking chicken, pasta, and vegetables was a little over taxing, but I was able to get through with no major mistakes.

The whole family was eating this Sunday, so I bought extra chicken.
