Meatball Sandwiches

The Selection

It's NFL Championship Sunday.  Need to drop diet plans and have a football worthy meal this Sunday.  It feels like a hot meat and cheese day for cold weather and football.  Something I have not had before on Sunday is meatball sandwiches.  I pulled a family Recipe for today.


The Preparation

The Tomato Sauce for the meatballs uses the same recipe as the Italian Sausage Sandwich recipe.  The meatball recipe is below.

Ingredients:


  • 1 pound ground beef
  • 2/3 cup Italian bread crumbs
  • 1 egg
  • 1 garlic clove finely chopped
  • 1 tsp chopped parsely
  • 2 tablespoons grated cheese
  • 4 oz grated mozzarella cheese
  • salt and pepper to taste
  • 1/4 cup olive oil

Preparation:
  1. Mix all ingredients together in a bowl, then shape into balls.
  2. Brown meatballs in a pan with olive oil
  3. Place browned meatballs in tomato sauce and simmer (as long as you like)
I altered the recipe slightly and added 2 hot italian sausages to the meatball mixture to give a little extra flavor and stretch the ground beef to feed more family members. When preparing sandwiches I also added mozzarella cheese on top and placed in the toaster oven to melt and brown the cheese.

If you have all the ingredients, this is a very easy recipe to prepare.



The Outcome

Great comfort meal that is easy to eat in front of the big screen to not miss any championship football action.
