The Selection

Wanted to see if I could find another DASH diet friendly Recipe.  However, I'm still looking for recipes with some type of meat.  Pork tenderloin still qualifies as DASH friendly.  I recalled from the Sixteen Spice Rubbed Chicken recipe that cabbage is one of the healthiest vegetables one can eat.  

A quick search on whittlerz.com produced only 6 results.  The pork Tacos with Texas fries sounded like an interesting mix.


The Preparation

I started by toasting the pumpkin seeds.  I have never done this before.  They started to pop after a few minutes. They continued to crackle even after removing from the heat.  Very interesting.  The smell caught the senses of others in the house.  Perhaps a few were burnt.   Instead of a grinder, I chose to chop them.

Coating and cooking the pork was simple after chopping up the pumpkin seeds and mixing with the other spices.

The recipe seemed unclear regarding whether or not to mix the salsa recipe with the cabbage and sliced onions.  Cabbage by itself didn't sound right, so I ended up mixing them.  I figured the ingredients will all end up on the tacos anyway.



The Outcome

The pork had a great smokey flavor.  The salsa made a great addition.

I have a small fryer that I have used in the past for home made potatoes.  Roasting them in the oven seemed unusual, but ended up turning out very well.

Great overall recipe.
