The Selection

According to Foodimentary.com, March is National Noodle Month.  We have had a number of pasta dishes before, but none with pork.  A quick search on pasta and pork at whittlerz.com turned up over 700 recipes.  As is my passion, I found a recipe with an interesting name.  An easy guarantee I have not made it before.  Selection done!

The Preparation

Halusky is a Slovakian potato dumpling.  This recipe called for noodles instead.  So keeps us aligned to National Noodle month, but makes this a non-authentic recipe.

I was able to find Pancetta in the store that was already cut into small chunks.  This was a good time saver.  Sliced pancetta is a bit sticky and difficult to cut.  All preparation steps were pretty easy.  One pot for the noodles and one pot for the vegetables and pancetta.  Compared to last week's Beouf Bourguignon, it doesn't get much easier.

The Outcome

The pancetta and capers (even though washed) brought both a salty and vinegar like taste to the dish.  Tastes OK.  Just not special.
