The Selection

Waking up this morning, it felt like a steak day.  Seems like it has been a while.  Not seeing anything jumping out at me for spring vegetables at Southland Framers Market site, I decided to include the broad category of root vegetables when searching for recipes on whittlerz.com.  Of the more than 200 recipes returned, my eye was drawn to the Beef Tenderloin with Spring Vegetables Recipe.  Since today is the first day of spring, let's go with it.


The Preparation

Lots of good vegetables (don't think I have previously eaten as many carrots as I have in the last year).  Quite a bit of chopping and cleaning.  The recipe kept referring to something called 'Champ'.  This turns out to be mashed potatoes with scallions mixed in.  A bit more chopping and boiling task to get these done.  

Broiling the vegetables and cooking the steak on the stove were pretty easy.


The Outcome

As family members came down to eat, the comments heard was 'it smells like a restaurant'. After a year of preparing Sunday dinners, I may just be starting to get the hang of it.

Great meal.  Everyone enjoyed.  This recipe is highly recommended for others.
