The Selection

When thinking about today's Meal, I glanced in the refrigerator and noticed several vegetables (several onions, green bell pepper, celery) left over from the prior week.  Instead of letting them spoil, I thought I would use them as criteria for selecting a Recipe for today's meal using whittlerz.com.

With the 3 vegetables selected, whittlerz returned over 140 recipes.  Plenty of salads and salsa's.  Guid-Moc-Shoe was near the top.  I had many of the ingredients except for jalapeño and yellow onion.  Time to clear out the refrigerator.

FYI, I did a little bit of internet searching on 'Guid-Moc-Shoe' and could not find anything that might tell me the significance of the recipe name.


The Preparation

Not too difficult.  I have traditionally boiled corn on the cob to make sure it is crisp and juicy. Leaving the external husk on and cooking on a Stove grill pan kept it moist.  I charred the peppers on the gas stove, but they did not reach a state where the charred skin was easily peeled.  Everything else went like clockwork.


The Outcome

From the family:  'Wow, that's a lot of onions!'  I added 2 jalapeños instead of the called for 1/2 jalapeño to spice it up.  It was not over-powering.  Good overall blend of flavors.
