The Selection

Getting up this morning I had a craving for pork.  One of my daughters loves pork tenderloin no matter how it is prepared.  I thought I would try searching whittlerz.com for recipes that include pork loin and cheese.  The majority of the results returned were breakfast recipes.  I am not opposed to eating breakfast for dinner (we often eat home made breakfast burritos toward the end of the week), but thought it best to find something more oriented to dinner.

I altered the search criteria to include chili peppers (I love spicy food).  The Sweet and Spicy Pork Slaw Sandwich caught my eye.  The recipe did not include a link to a coleslaw recipe.  A quick Google search returned a basic coleslaw recipe by Robert Irvine.


The Preparation

After returning from the store, I made the spicy rub, applied to the pork loin and dropped it in the refrigerator for the afternoon.  Easy so far.

Since I had some extra time in the morning, I also prepared the coleslaw.  I have eaten quite a bit of cabbage since starting this Sunday Dinner journey.  I have a acquired a real taste for it.  Good thing it is full of good vitamins.


The Outcome

The fatty area's of the pork loin made it difficult to pull apart with a fork.  Other than that minor difficulty, the sandwiches were great.  Highly recommended for others.
