sorry, that it’s been a bit quite around here for a while. i started working part time as a consultant again beginning of march. due to that in combination with teaching yoga i’ve got my hands pretty full. but i love it, finally having a “purpose” again and concerning myself with something else than yoga. although it was great to have most of the day off, but after a while you’re kind of getting a bore out (yes, i know it sounds unbelievable, but it’s actually like that :) ).
last year i promised you the recipe for the marble Cake. however i never came around to baking one until now. i kind of like a simple cake like that. it doesn’t always have to be something fancy, but can be soemthing classically austrian as well. i prefer when there is more of the dark, chocolaty part of the cake, that’s why i usually divide the dough half/half. but that’s up to you.
ingredients
- 200 g soft butter + some
- 200 g icing sugar
- 300 g flour + some
- 1 pkg baking powder
- 1 pkg vanilla sugar
- 4 eggs
- 120 g chocolate
- maybe cocoa powder
- 1/8 l milk
- 1-2 tbsp rum
preheat oven to 175°. grease and flour a Bundt Cake form.
separate eggs. beat the egg whites into stiff peaks and set aside. melt chocolat ein a bain marie.
whisk butter, sugar, vanilla sugar, rum and egg yolks until creamy. alternately add flour/baking powder and milk to the dough. divide dough into 2 parts. add melted chocolate to the smaller part – if it doesn’t taste chocolaty enough add 1-2 tbsp cocoa powder.
divide egg whites and fold into the 2 dough parts.alternately fill white and brown dough into the bundt cake form (white – brown – white). bake in hot oven for 1 hour. test with a thin stick if cake is done (no dough should stick to the stick). serve sprinkled with icing sugar.
