coconut oatmeal cookies with chocolate

friday night i had a craving to bake cookies. after looking through one of my favorite books, “cookies” from Cynthia Barcomi, i found several recipes. the decision was hard, but i chose Coconut Oatmeal Cookies with chocolate. this combination was very appealing to me and the oatmeal adds a slightly healthy touch ;) i have to say it has something soothing to me, to know that i always have all the ingredients at home i need to bake a cake or cookies. you’ll never know when you get a craving for brownies or cookies. also the baking has something peaceful and helps me to center myself.

as usual the result lived up to my expectations – they are on the softer side, but still got some crunch due to the oatmeal and the almonds, with a slight taste of Coconut. i also reminds of a muesli bar and i love them as a quick breakfast. like with most recipes from cynthia barcomi i reduced the amount of chocolate (yes, you heard right :) ) – 350 g seemed a bit excessive and i made the cookies with 200 g. in my opinion that was more than enough, but try for yourself.

ingredients (about 40-50 cookies, depending on size)

  • 100 g flaked almonds
  • 140 g flour
  • 3/4 teaspoon vanilla salt
  • 1/2 teaspoon baking soda
  • 200 g oatmeal
  • 100 g desiccated coconut
  • 200 g chopped chocolate (i used a mixture of dark and milk)
  • 250 g soft butter
  • 125 g muscovado sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

preheat oven to 180°. line baking trays with baking paper.

slightly roast the almonds in a dry pan, set aside to cool. mix flour, vanilla salt, baking soda, oatmeal, desiccated coconut, chocolate and almonds in a bowl.

in a food processor or with a handheld mix whisk butter and sugar until creamy. add eggs and vanilla extract and whisk for another minute.

add flour mixture little by little until everything is roughly mixed. the dough is rather soft.

place heaps the size of 2 teaspoons on the baking trays, space them about 5 cm apart. the cookies will increase in size when baking.

successifely bake in hot oven for 10-12 min (depending on size). let cool down for 10 min, then place them on a cooling rack. stored in an airtight container the cookies will keep for 2 weeks (that is if you haven’t already eaten them anyways ;) )
