one pot pasta

especially on instagram you always see yummy pictures of one pot Pasta. for those who haven’t heard of that yet: for that all ingredients, incl. uncooked pasta, are simply put in one pot, topped with liquid and cooked within 15-20 min. so no need for extra pots for cooking the noodles and the sauce. you also don’t have to do much other than stir every once in a while and just like that a quick meal is ready. of course you have got to have a feeling for the seasoning, that might not be that easy to start with.

when i was making the chocolate sponge cake the other day, i had this one Pot Pasta simmering on the stove. i’d say it tasted like a vegetarian carbonara, where the sundried tomatoes substituted the bacon. i loved that the sauce really clung to and covered the pasta. at the end i added one egg yolk, but you don’t have to do that. if you want some meat with it, just sear some pieces of chicken in the beginning.

ingredients (1 portion)

  • 1 small onion or shallot
  • 20 g sundried soft tomatoes (so without oil)
  • 100 g penne (or other short pasta)
  • 250 ml hot water
  • 50 ml cream
  • 1 egg yolk
  • 1 teaspoon instant soup powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried oregana
  • 1/4 teaspoon salt
  • olive oil

peel onion/shallot and cut into very small cubes. also chop dried tomatoes.

heat oil in a pot, steam onion/shallot until glassy, also sear tomatoes shortyl. top with water and cream, add seasonings and pasta. cook uncovered for 15 minutes at medium heat, stir every once in a while.

at the end test if pasta is al dente, if not add some more liquid. when they are ready, quickly stir in egg yolk and serve.
