chritsmas cookies – lime shortbread

i don’t know why i never thought about adding aroma to Shortbread before. it already worked perfectly with chocolate and with this hint of Lime the cookies are amazing as well. due to the juice there are a bit softer, but still have enough crunch. also the smell is to die for and awakens my longing for bali a bit :)

ingredients

  • 300 g flour
  • 50 g starch
  • 100 g sugar
  • 1 tbsp vanilla sugar
  • 1 pinch of salt
  • 2 teaspoons grated lime peel
  • 50 ml lime juice
  • 1 egg
  • 175 g cold butter

you can make the shortbread either with your hands or if you want to make your life easier (like me), just put all ingredients into a food processor (don’t use the knife but the plastic knife) and let it do the work. if you prefer to knead the Dough yourself, mix flour and baking powder and place it on a work top, make a depression in the middle and put in the sugar, vanilla sugar, lime peel, lime juice, salt and egg. place the butter in piece on the edge of the flour. knead everything into a smooth dough.

flatten the dough, spread the chocolate flakes on top, fold and knead through. wrapped in cling film place in fridge for about 30 min .

preheat oven to 200°. on a floured work top roll out dough 3 mm thick and cut out cookies. place on baking trays lined with baking paper and bake about 8-10 min until golden yellow. remove shortbread from oven, let cool down on a cooling rack and store in a tin.
