savory pastries with ham

since the fall happening at tante fanny was canceled, i received a very nice package with their products, a pumpkin and a bottle of wine. i use Puff Pastry a lot but usually for pizza, quiche or simply filled with jam. somehow i was in the mood to try something different, that’s why i made these Savory Pastries with ham. do you know the feeling when you know exactly how something is supposed to taste but aren’t 100% sure how to make it? that’s how it was for me with these savory pastries. i’ve eaten them plenty of times and a long time ago also really liked the frozen kind, but for some reason i never made them myself. although it’s so easy and the perfect fingerfood for a party or in my case as a snack

ingredients (16 pastries)

  • 1 package puff pastry (270 g)
  • 150 g ham, sliced
  • 2 tbsp crème fraiche
  • 1 tbsp sour cream
  • 1 – 1,5 teaspoon dried marjoram
  • salt
  • 1 egg, whisked

preheat oven to 200°

for the filling mix crème fraiche with sour cream and marjoram (salt later, the ham is adding quite some taste). cut ham into small pieces and add to the cream. salt to taste.

roll out puff pastry on baking paper. cut lenghtwise in half and each half into 8 triangles. place a heaped teaspoon filling on the broad side of the triangles. roll from this side into croissant shapes.

with the baking paper place on a baking tray. brush the pastries with the egg and bake in hot oven for 13-14 minutes until golden brown. they taste best if still a bit warm.
