This was so good. I was so busy eating it that I almost forgot to take a photo.
1 package Corn Muffin mix
1 can Rotel 10 oz), diced tomatoes, green chilies
4 whiting
2 Tablespoon olive oil
1 medium size Onion, sliced
1 tablespoon onion powder
¼ tsp cayenne
1 tsp each salt & pepper
Follow directions to make Corn Muffin mixture. Set bowl aside. In a pan saute fish and onion in olive for about five minutes. Add spices. In 8 x 8 bakeware, pour a layer of muffin mixture (half). Put fish over this layer. Drain can of Rotel and pour over fish. Top with remaining muffin mixture. Bake in oven at 350 for 10 to 15 minutes or until done.
