Chicken Panang Curry Pizza





Hi everyone! A few weeks ago I bought one pack of Thick Flour Tortillas because it was on sale. The product claims also that it is thick and it is perfect for making Pizza. Wow! So today I would like to cook some food using thick flour tortillas. And I will tell you also about my opinion about using flour tortilla as a pizza dough.

When I make a pizza at home, I always put bacon, champignon mushrooms, olives, bell pepper and a lot of cheese as a topping. I use meat sauce as a topping sometimes but today I would like to do something out of my comfort zone. I want to use Panang Curry as a topping. And I was very satisfied with the result so I'm gonna share you how to cook this recipe.

PREP TIME : 15 minutes ( without making dough)
COOK TIME : 15 minutes
READY IN: 30 minutes


Ingredients ( for 1 small pizza )
1. 125 g chicken fillet, thinly sliced
2. Home-made pizza dough or 1 thick tortilla ( which is around 70 g) 
2. 30 g champignon  mushroom, sliced
3. 20 g Panang Curry paste
4. 30 g bell pepper, cored and sliced lengthwise
5. 75 g shredded cheese ( here I use Gouda cheese) 
6. 3 tablespoons coconut cream  If you're using canned coconut cream, use the cream that is on top.
7. 2 teaspoons fish sauce
8. 2 kiffir lime leaves , thinly chopped lengthwise
9. Sweet basil leaves , for garnish
10. 1 teaspoon oil
11. 1 chilli ( choose the type which is not spicy) , sliced

Instructions 

1. Heat an oil in frying pan with medium heat, add  panang curry paste and stir fry until aromatic smell comes out , add coconut cream and stir fry for a few minutes, add chicken and stir fry until chicken is cooked. Seasoning with fish sauce. Remove from the heat, set aside.

2. Preheat the oven at 200 degree celsius ( 400 F). Line baking tray with a parchment paper. 

3. Spread the mixture from 1) on top of the tortilla , add mushroom and bell pepper on top. Finishing with cheese on top.

4. Bake the pizza around 15 minutes or until the cheese is melted and it is golden brown on top. Take it out from the oven

5. Garnish with lime leaves, basil leaves and chilli. And yes it's done! 

If you like the thin and crispy pizza crust, you would enjoy this recipe, but if you like thick and soft crust, it's better to use a pizza dough instead. This pizza is very tasty , not so spicy but you can feel the yummy smell of Panang curry. In the case that you want to make it more spicy, add cayenne chilli powder while we are making Panang curry sauce.
