Chocolate Mint Semolina Pudding


Hi, 3 weeks ago I bought Semolina for cooking simple Swedish breakfast "Mannagrynsgröt" or semolina porridge which is eaten with cinnamon, sugar and milk. It tasted good actually but I ate this as breakfast day after day until I felt like "Come on! I should find another recipe for semolina". 


While I was thinking about semolina's recipe I ate my favourite "After Eight". Suddenly I got an idea about making chocolate mint semolina pudding. I was not sure if it was an good idea so I tried to make it and see if it was successful. And wow! It tastes very yummy! So I would like to share my recipe to you. It is not complicated to cook this recipe actually. So let's see how to cook.

Ingredients ( for 2 portions) 

For chocolate pudding part
1. 200 mL milk
2. 20 g butter
3. 30 g sugar
4. 15 g cacao powder
5. 2 tablespoons semolina
6. 1/4 teaspoon vanilla extract

For mint pudding part
1. 200 mL milk
2. 30 g sugar 
3. 1-2 drops green food colouring
4. 1/2 teaspoon peppermint flavouring

Instructions

1. Begin with chocolate pudding part by roasting semolina in a small saucepan with a medium heat. Once it changes into tan color, add milk, sugar and cacao powder and reduce a low heat. Stir often until the mixture thickens. Remove from heat then add butter and vanilla extract, then pour into small serving cups. Let it cool down at room temperature.

2. With another saucepan, roast semolina until it becomes tan. Then add milk, sugar and green food colouring. Stir often until the mixture thickens then remove from the heat. Add peppermint flavouring and stir until everything is well-mixed. Then pour on top of the chocolate pudding and put in refrigerator.

3. Before serving, sprinkle with chocolate on top. And yes it's done! 
Ps. Once you add liquid into semolina, keep stirring because it can be lumpy if you don’t stir it well ( I used whisk)

Ps.2 I did an experiment by adding soymilk instead of milk. It tasted still very good. So if you are allergic to milk or get a condition like lactose intolerance, you can change it to soy milk.
