As much as I like cake, it’s important to find sweet treats that have less fat and calories. In the summer, I love s’mores. It brings me back to summers spent camping and enjoying the outdoors. It’s not yet warm enough to sit outside, even around a campfire, so I decided to bring the fun indoors. To lighten the dessert, I chose to use Chocolate pudding. With chocolate, Graham Cracker Crumbs, and toasted marshmallows- this dessert hits the spot!
S’Mores Pudding Pie Serves 4
1 pkg. chocolate instant pudding
2 c. cold milk
1/2 c. chocolate chips
1 c. crushed graham crackers
1 – 2 c. mini marshmallows
- Crush the graham crackers with a food processor or a rolling pin. Sprinkle about 2 Tbsp. of the crushed graham crackers on the bottom of each baking dish. Next, whisk the pudding mix with the milk. Spoon over the graham crackers pieces. Then, sprinkle a few chocolate chips over the pudding. Top with mini marshmallows.
- Heat the oven to broil. Place the baking dishes on a baking sheet. Broil for 3-4 minutes, watching carefully, until toasted. They can burn quickly! Garnish with chocolate chips and graham cracker crumbs.
