Why do Nachos have to be smothered in cheese?? I mean, normally I am all for cheese, but sometimes less is more!
In college, Tuesday nights were nacho night. One local bar served them for $2. They served them with Grilled Chicken, lettuce, tomatoes, beans, jalapenos, sour cream, and loads of gooey cheese. Amazing!! But, also partially responsible for my freshman 15…or 30.
Honestly, I much prefer a healthier version. These nachos are delicious! Once you move to fresher ingredients, it’s hard to go back! They are topped with Grilled Chicken, salsa, lettuce, diced tomatoes, and shredded cheese. Make it for dinner. Trust me- you will not be disappointed!
Nachos for One
10-15 tortilla chips
1 grilled chicken breast, cooked and sliced
1/4 c. salsa
1/4 c. shredded cheddar cheese
1/3 c. shredded iceberg lettuce
1/2 plum tomato, diced
- Arrange tortilla chips on a plate or in a bowl. Slice the grilled chicken into thin strips. Top the tortilla chips with the chicken strips. Next layer, salsa and shredded cheese over the chicken. Microwave the nachos for 20-30 seconds. Top with shredded lettuce, diced tomatoes, and additional shredded cheese. Eat and enjoy!
