No-Carb Taco-less Turkey Taco

SO, I was trying to be good.  Trying to do the right thing.  My freezer is stuffed with leftover dinners.  I decided it’s finally time to clean out my freezer and use up those leftovers.   But, I came home from work and, as usual, I was STARVING!  And nothing was thawed out.

Now, I literally don’t even keep deli meat in my house very often, which can be both a blessing and a curse!  (Sometimes, a nice turkey and cheese sandwich sounds SO good!)  I do keep bread in the freezer.  So, there was that.  And, I always have cheese and peanut butter on hand.  Sadly, the contents of my fridge were beginning to resemble that of a workaholic bachelor, except I don’t even have beer…

And, as much as I love grilled cheese, it’s probably not the best dinner idea when I’m trying to be good.

Just before I threw in the towel and resorted to cereal or tortilla chips, I found some ground turkey in the freezer.  Luckily, I had frozen individual portions in small freezer bags.  Hhmmm…quick-cooking…that sounded promising!  Without a destination in mind, I threw the Frozen Ground Turkey into the skillet with a little olive oil.  Naturally, I added some salt and pepper.  Next, I sprinkled on a little cumin.  I like to think of it as “taco” spice, because it’s warm, used in many Spanish dishes, and always makes me feel like I’m eating a taco.

Since I was trying to be good, a vegetable was  needed to complete my dinner.  I did have a few peppers laying on the counter.  But, that would require chopping…  I opened the freezer one more time and was delighted to find diced red peppers.  Voila!  I threw those into the skillet as soon as my turkey was finished.

I considered topping my dinner with Crushed Tortilla Chips, but decided to settle for just cheese.  Plus, I had already eaten some chips while I was making dinner…

Honestly, this meal was satisfying and tasted wonderful!  I was a little worried that the meat might have been a little freezer burnt, but it turned out great!  A perfect, low-carb meal ready in under 10 minutes!!

No-Carb Taco-less Turkey Taco

1/4 lb. frozen ground turkey

1 c. diced peppers, fresh or frozen

1 Tbsp. olive oil

Salt and pepper

1/2 tsp. cumin

1/2 c. shredded cheese

  1.  Heat a medium skillet over medium heat.  Add the olive oil and ground turkey.  Allow the meat to begin to thaw.  Season with salt, pepper, and 1/4 tsp. cumin.  Cook until the meat is lightly browned and cooked through.
  2. Remove the turkey from the skillet.  Pour diced peppers into the same skillet.  Season with pepper and 1/4 tsp. of cumin.  If the peppers are frozen, I wait to add salt until later.  Cook until the peppers are browned.  Spoon the peppers over the turkey.  Add salt, if desired.  Then, top with shredded cheese (and crushed tortilla chips.)
