Brunch Week is here! And all week long there are going to be so many recipes. I am even doing six (one each day) maybe because brunch recipes are some of my favorites (but I really just thrill at getting another chance to cook something else!)

For today I am doing an egg recipe, which is a variation on the classic Indian egg dish called Akuri (or Ekoori, depending how you like to spell it). It is a spicy version of scrambled eggs  and it goes very well with chapatis or other flat breads. I also served mine with bacon (not what I expect you would see anywhere in India, but…) I love bacon!

I was very happy to utilize some Stonyfield yogurt as well  as a little egg crate that Le Creuset was kind enough to send along.  And while I usually just park my eggs on the counter on a towel or in a small bowl while they warm up for cooking, this little egg crate is quite nice. I also suspect it is better for holding my hard cooked eggs in the fridge instead of letting those eggs roll haphazardly around my cheese drawer. And along with another egg crate I had got about a year ago, they will make a nice display for Easter eggs come next year. It is part of the prizes for this event, so I hope you get to win that! Some Moms (I am one of these) love nothing more than some simple, but spicy food for a bit of brunching. And if I had a cup of spiced chai tea to go with, I might be whisked away in my imagination to some  far off land that “Smells of spice!” (as Colonel Brandon of Jane Austen’s Sense and Sensibility might say).

Akuri Scrambled Eggs

  • Servings: 2-3
  • Time: 10mins
  • Difficulty: easy
  • Print


Ingredients:
  • 2 tablespoon butter
  • 1/3 cup chopped Vidalia onion
  • 6 large eggs
  • 1/4 cup Stonyfield plain Greek yogurt
  • 1/2 teaspoon curry powder
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • salt and black pepper (to taste)

Method:

  1. Saute onions in butter until onions caramelize.
  2. Whisk together the eggs, yogurt, curry powder, cilantro, garlic, salt and black pepper.
  3. Add eggs to caramelized onions in pan, and cook over low heat, stirring gently, until eggs are soft set.
