My Fool-Proof Melt in the Middle Chocolate Brownies!
One of my absolute favourite things to bake are chocolate brownies, as they combine my love of baking and my undying love of large amounts of chocolate! This recipe is so great because you can play around with it, add different ingredients and create different things each time but, for now, here is the recipe for my Fool-Proof Melt in the Middle Chocolate Brownies! (As you can see from bellow, it is a well loved recipe...)
Ingredients...
225g Butter (or Margarine)
100g Cocoa Powder
4 large Eggs (or 5 smaller ones)
450g Caster Sugar
1/2 tsp Vanilla Extract (you can use essence but extract tastes much nicer and you don't have to use as much of it!)
150g Self-Raising Flour
Method...
1. Firstly, pre-heat your oven! Pre-heat to 180 degrees on a fan oven (around 200 degrees on a normal oven). Then, grease your baking tin (depending on the size you use depends how deep your brownies will be)...
...and line with grease proof (aka baking) paper!
2. Melt the butter in a small pan (stirring to make sure it doesn't burn)
3. Then, when the butter is melted remove from the heat and stir in the cocoa powder creating a melted chocolatey goo! Then leave to cool for about 10 minutes
4. While the chocolatey goo is cooling, whisk the eggs, sugar and vanilla together! (I admit, I cheat here and use a Kenwood BUT the same result can be achieved by whisking by hand!)
6. Once they have achieved that fluffiness, stir in the chocolate goo mixture ...
... and bake in the oven for 35 minutes!! When baked, the out side should be firm but still bouncy (and the middle should be gooey and delish!)
9. Once finished, remove from the oven, and after letting cool for a few minutes turn out onto a cooling rack
10. After cooling for about 15 or so minutes, remove the baking paper!
11. Once cooled (probably another 10/15 minutes but you should be able to feel this!) turn out onto a board and cut into pieces (however big or small you would like)
12. Then, all you have to do is eat them!!
When serving, try dusting some icing sugar over the top!
I love these brownies and would happily eat them all day everyday so, I hope you enjoy baking and eating them as much as I do!!!

5. Keep whisking until the eggs, sugar and vanilla have gone pale and fluffy (this means they are full of air, ensuring your brownies will be delightfully light!)
... and then add the flour!
7. Mix until all the ingredients are well combined BUT be careful you don't mix too hard and beat all the air out!! (Again, I have used my Kenwood but the same result can be achieved by hand but when you bake as much as I do a little cheating doesn't hurt...)
Adding that little something extra...
If you want to add something extra, now is the time to do it! To create a Mayan twist, add some crushed dried chillies here (I normally add 3/4 small ones) OR for a nutty bake, add your choice of crushed nuts (blanched Almonds work particularly well here)
8. Once it is all mixed together (and looking pretty tasty already!) pour the mixture into your baking tin...
...making sure the mixture is evenly distributed...
