Flax Waffles



Another issue I had when I started low-carbing was the lack of breakfast options. I quickly grew bored of eggs and bacon (pork, turkey or otherwise), and I really missed all the 'normal' stuff. Fortunately, I found this easy waffle recipe, which has a Flaxseed Meal base. I thought I'd share.

Yields 6 waffles

INGREDIENTS


1/2 cup Flaxseed meal
1/2 cup hazelnut flour
1/2 Cup Almond flour
2 tsp. ground cinnamon
1/4 tsp. sea salt
1/4 cup stevia
4 eggs
1 cup Almond milk
1 tsp. baking powder

DIRECTIONS


In a medium bowl, combine flaxseed meal, hazelnut flour, almond flour, cinnamon, salt, and sweetener.

In a large bowl, whisk together the eggs and almond milk. Add the dry ingredients and combine well.

Set waffle iron to high and, following the manufacturer's directions, cook waffles until light brown.
