I realize that this is not necessarily a low-carb Salad, considering the amount of Strawberries I put in it (yum, strawberries), but it's certainly healthy, right? Right.

INGREDIENTS
1 lb. baby spinach
6 cups strawberries, sliced
1 1/2 cups dried cranberries (unsweetened if possible)
1 1/2 cups pecans, coarsely chopped
Goat cheese, crumbled, to taste
INSTRUCTIONS
Toss together all Ingredients in a large bowl.
While serving, sprinkle with goat cheese.
Serve with your favourite dressing, although I'd suggest a raspberry or red onion dressing.

Quite frankly, I completely forgot to make a dressing for this, or buy one for that matter, but it's still quite delicious without one.
