Sushi rice recipe:

The first thing that you need to prepare is the Tezu, the vinegar and water solution. Mix 250 ml of water, 30 ml of rice vinegar, and 5 ml of salt together.

Next, prepare the rice for cooking. Wash the rice several times until the water that runs off of it is fairly clear. Strain it for around 30 minutes, making sure that the water you last used to wash it has dripped off. Pour the rice into the pot or rice cooker and add in the correct measure of water. The water would of course depend on how much rice you are using. Those who have rice cookers at home would just have to turn their rice cooker on and wait for the rice to cook.

For those who do not have a rice cooker, you can use the stove instead. Put the pot of rice and water over the stove. Wait for it to boil, and then let it simmer to the lowest heat possible once it does. This would allow the rice to steam. Make sure that you keep the pot tightly covered. Once the water has steamed and the rice has the right consistency, remove the pot from the stove and let it sit for around 15 minutes.

Mix 60 ml vinegar, 30 ml sugar and 5 ml salt in a saucepan, stirring every so often until the sugar dissolves. Once it is done, remove it from the heat and let it cool to room temperature.

Now, moisten a flat-bottomed bowl with the Tezu mixture. Put the rice into it, and then add a little sushi vinegar mixture. Mix the rice in a folding motion so that it will not be crushed. Continue doing this until all the vinegar solution has been poured in. Fan the rice for about 5 to 6 minutes. This should remove the excess moisture and would create a glossy shine to the rice.

Now that you have finished with the sushi rice recipe and prepared perfect batch of rice, you are halfway through in trying to create the perfect sushi.
