Bicolano Fish Cosido (Sinigang sa Kalamansi)

When I was in the province we always cook this Simpleng Luto meal, "Cosido" if we don't have anything in mind for out viand we only need a kilo of Tilapia (fresh water fish) or galunggong and everything is alright because most of the ingredient is FREE (But no free in city). This meal is very good to partner with fresh bagoong with sparkling red peper.


Ingredients:
Fish (Tilapia or Galunggong is prefered)
1 to 2 cloves of garlic
1 onion, sliced
2 to 4 medium plum tomato, sliced
Medium Ginger to remove fishy taste
small amount of moringga leaves (malunggay)
5 to 7 pieces of kalamansi
salt to taste

Procedure:
1. Mix garlic, onion, tomato, and ginger to a liter of clean water and let it boil.
2. While waiting for it to boil prepare the kalamnsi juice and set aside.
3. Now, when it is boiling you can add salt depend in your level of taste, add msg if you want but optional.
4. Put fish (tilapia) in the boiling soup and let it cook for about 5 minutes.
5. Add the moringga leaves (malunggay) and cook for 5 to 10 minutes.
6. Now, add or pour kalamansi juice in it and you can turn off the fire.
7. Serve and enjoy!
