1 1/2 C butter
1 1/2 C peanut butter
2 C packed brown sugar
3 eggs
2 tsp vanilla extract
3 C quick cooking oats
2 C whole wheat flour
2 tsp baking soda
1 tsp salt
1 24 oz bag chocolate chips
Preheat oven to 350 degrees. Cream the shortening and peanut butter. Add the brown sugar, eggs, and vanilla; mix well.
Combine oats, flour, baking soda, and salt; add to the creamed mixture and mix well. Gently fold in chocolate chips.
Drop by rounded teaspoonfuls onto parchment paper covered baking sheets. Bake 12 minutes.
This recipe makes A LOT of dough. I made a couple dozen cookies with it and then divided the rest of the raw dough in half, put it in zip-locks, and then stashed it in the freezer.
