Perugannam

Curd Rice is a very simple word for this..!! There are so many ways to make Curd Rice..!!

Summer started and time to Hydrate and choose foods with balanced nutritional value with taste…!! Perugannam, Curd rice us part of our Breakfast diet atleast twice a week..!! There are so many ways to make Curd rice very tasty..!!

Daddojanam is the Curd rice served in temples without chillies, Ginger, Garlic etc..,

They use Pepper, fruits, Curry leaves and Coriander leaves..!!

We make so many so varieties like Daddojanam, Ava Perugannam, Tellavayi Perugannam, Allam Perugannam and simple normal Perugannam..!!

Let’s start from simple Perugannam with a fruit..!!

Kindly take a note of these:

  1. Curd must not be sour if we add fruits to it.
  2. Curd must never be added to hot hot tadka tempering but tempering must be added to Curd..!!
  3. Milk must be boiled and cooled down, if cream is there, would be very good..!!
  4. Adding Cinnamon or Nutmeg or pepper, when fruits are added gives extra flavour and avoid from catching colds ( for few)

Ingredients :

  1. Steam Cooked rice: 4 cups
  2. Fresh curd : 1 cup

Boiled Milk with cream : 1/2 Cup.

  1. Salt : as needed
  2. Sugar : pinch
  3. Cup of fresh ripen papaya pieces : 1/2 cup

Tempering :

  1. Oil : as needed
  2. Asafoetida : 2 pinches
  3. Green chillies : 6
  4. Curry & coriander leaves – hand full
  5. Cinnamon powder – 2 pinches
  6. Split Gram, Urad Dal, Cumin seeds : 2 tb spoon

Procedure:

  • Steamed Rice is taken and add the Curd, milk, salt, sugar, papaya fruit and let all soak for 20 min..!!
  • Heat the pan and start tempering with all the ingredients and finally add the cinnamon powder and switch off the stove and add to the Soaked rice mixture..!!
  • And mix completely, if possible with the hand and close it for 10 min..!!
  • Serve the Curd rice with Ginger chutney or Pickle or Powders..!!
