Bittergourd Peanut fry

Bittergourd peanut fry | Kakarakaya palli vepudu | kakarakaya verusenaga vepudu- step by step process of bittergourd peanut fry is shown in below. Bittergourd fry is very easy to prepare this recipe and also takes very less time to prepare this recipe, also requires very less ingredients. Here we are using bittergourd as  main ingredient  so all of us know bittergourd or kakarakaya is helpful for diabetic patients because it stabalizes the sugar levels in our body and also here iam using very less amount of oil so this recipe contains very less amount of fat soo every may have this recipe. Instaed of groundnut powder you may also use grated coconut. Here i didn’t squeeze the juice of bittergourd iam just soak it in salt water due to this we are not losing nutrients in kakarakaya but in case of diabetic patients i suggest add less amount of groundnuts.

Ingredients:-

  • Bitttergourd or kakarakaya-1/4 kg
  • Groundnuts or palli or senagapappu-1/4 kg
  • Salt to taste
  • Red chilli powder require amount
  • Garlic cloves-4
  • Turmeric powder-a pinch
  • Coriander powder-1 tsp
  • Coriander leaves require amount
  • Curry leaves require amount
  • Groundnut powder-1/4 cup

For Tempering:-

  • Chana dal-1 tsp
  • Urad dal-1 tsp
  • Cumin seeds-1/4 tsp
  • Mustard seeds-1/4 tsp
  • Oil- 3 tbsp
  • Green chilies-2
  • Red chilies-2

Preparation Method:-

  1. First chop bittergourd into small circles . Later add chopped kakarakaya or bittergourd in salt water for 15 to 20 mins. Later drain water take out of  chopped pieces dry for sometime. Now keep it aside.
  2. Now heat oil in a wide bottomed pan add groundnuts fry till it turns into golden brown in colour later keep it aside.
  3. Now add redchilies, mustard seeds, cumin seeds, chana dal, urad dal, fry it till mustard seeds will spluttering later add green chilies, curry leaves, cloves fry it for sometime later add bittergourd or kakarakaya fry it till went out raw smell in bittergourd. After add salt, red chilli powder, turmeric powder, again cook it for sometime.
  4. Now add coriander powder, ground nut powder mix it well later add fried ground nutswhat we prepare before.
  5. Switch off the flame serve hot hot bittergourd peanut fry by garnishing with coriander leaves.
