Savory Sweet Potato Apple Bake

Looking to be the potluck hero this year? This Savory Sweet Potato Apple Bake is full of fall flavors and perfect as a holiday side dish. A one-pan dish flavored with fresh thyme and warming spices.

I love how every season has its own different set of flavors. One of my favorite times of year, when it comes to food, is definitely fall. It always reminds me of hearty soups and warm, comforting dishes like casseroles. Let’s not forget lots of apples, pumpkin, squash, and sweet Potatoes.

A Savory Sweet Potato Dish for Any Occassion

Sweet potatoes are one of my favorite fall ingredients. They are relatively inexpensive and can be used in so many different ways. This Fall Roasted Sweet Potato Salad is a staple in my house as soon as October hits.

For this Savory Baked Sweet Potato and Apple dish, I combined two of my favorite fall ingredients – sweet potatoes and apples. Since there are so many sweet potato recipes out there that are sweet, I wanted to make this more of a savory dish. I used fresh thyme and warming spices like cinnamon to really bring out the delicious flavors in these ingredients.

The beauty of this recipe is that it looks stunning, but is really easy to make! Plus everything cooks in one pan, which means less mess to clean up…who doesn’t love that?

Putting this Simple Dish Together:

The first step in this simple recipe is to evenly slice the sweet potato into thin, round slices. To make this job easier, I used a mandolin slicer, which I set at 3/16″ sized slices. If you don’t have a mandolin, you can slice the sweet potatoes by hand. Try to aim for the same size thickness on each slice. This will help ensure the sweet potatoes cook evenly.

Once the sweet potatoes are sliced, you just layer them in a ring in a your oven-proof dish. I used a 10 inch cast iron skillet. You can use any dish you prefer. Note that if you use a bigger dish, you may need an additional sweet potato.

Once all the sweet potatoes are layered in the dish, you’ll add the apple and almond topping. Simply spoon it over the top of the sweet potatoes. You’ll then cover the dish with foil and bake until the sweet potatoes are tender, about 45-50 minutes.

I like to remove the foil and broil the dish for an additional two minutes once it’s done cooking. This gives the topping a beautiful golden-brown factor and really increases the wow factor.

Savory Sweet Potato Apple Bake

Prep Time: 5 minutes

Cook Time: 50 minutes

Total Time: 55 minutes

Yield: 4 servings

Ingredients

  • 3 large sweet potatoes
  • 2 tbsp olive oil
  • 1 medium apple, core removed and diced into 1/2 inch cubes
  • 1 tbsp sliced almonds
  • 1 tbsp fresh thyme
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp cinnamon
  • 1/2 tbsp honey

Instructions

  1. Preheat oven to 400ºF.
  2. Thinly slice the sweet potato into even slices.
  3. Arrange sliced sweet potatoes into a ring using an oven-proof skillet or round baking dish.
  4. Drizzle 1 tablespoon olive oil over the sweet potatoes.
  5. In a small bowl, combine diced apple, additional 1 tablespoon olive oil, sliced almonds, fresh thyme, salt, pepper, and cinnamon. Mix until well combined.
  6. Spoon apple mixture over the top of the sweet potatoes.
  7. Drizzle honey over the top of the apple and sweet potatoes.
  8. Cover pan loosely with foil and place in the oven to bake for about 40-50 minutes, until sweet potatoes are fork tender.
  9. Remove foil and place pan under the broiler for 2 minutes, just until topping is golden brown.
  10. Remove from oven and allow to cool slightly before serving. Garnish with additional fresh thyme if desired.

Notes

Home Chef Tip: If you don't have a round, oven-proof dish or feel comfortable cutting into round slices, you could also serve this dish casserole style, by dicing the sweet potato into 1 inch cubes, covering with the apple mixture and baking in the oven.
