Fall is my favorite time of the year. You get to enjoy so many dishes including soups, stews, and many more. At parties, side dishes are my favorite thing. Out of all of the food on the table, delicious side dishes catch my attention more than anything else.

This Maple-Roasted Beet Carrot Side Dish is one of them and is our fall favorite dish. It looks so vibrant and the flavors are amazing too. It is a unique side dish that’s perfect for a family dinner, potluck, office party, or just a weeknight meal.

A sweet compliment to any savory meal!

My favorite thing about this side dish is, it has a sweet and savory flavor combination. I love how tender and warm these vegetables are!

Heat up your oven and toss together the beets and carrots into a healthy and simple side dish to accompany any meal. This side dish is completely vegetarian and naturally gluten free. It is an extremely versatile dish that works well with just about any fall vegetables.

Ingredients for this 30-minute side dish:

  • Beetroots
  • Carrots
  • Maple Syrup
  • Salt
  • Pepper
  • Butter
  • Thyme
  • Extra virgin olive oil

How to make this simple side dish:

  • Preheat oven to 425ºF.
  • Cut the carrots and beets into bite-sized pieces.
  • Take one big mixing bowl.
  • Add carrots, beet, olive oil, salt, pepper, and thyme.
  • Toss until veggies are coated. Spread them out in an even layer on a baking tray.
  • Roast for about 15 minutes, or until the veggies are tender-crisp (this will vary depending on how big the pieces are).
  • Take the baking sheet out of the oven and add the butter and maple syrup directly to the baking sheet. Let the butter melt then toss it again until everything is coated.
  • Return the baking sheet to the oven for another 10 minutes.

That’s it! Garnish with some cilantro and serve immediately.

Notes

Home Chef Tips: When roasting any vegetables, be sure to chop them about the same size so they cook at the same time. Make sure to toss the veggies at least once while they are in the oven so they brown evenly. Adjust the sweetness according to your liking. You can add walnuts, pecans, or almonds too.
