Harvest Sheet Pan Dinner

Butternut squash, zucchini, and skinless smoked turkey sausage shine in this 30-minute meal that is completely perfect for fall. Full of fall flavors, there’s nothing not to love about this easy Harvest Sheet Pan Dinner!

My neighbor’s garden has kept me in zucchini for months and recently he gave me a couple of butternut squash. I’ve been working them into my recipes and what better way to serve these up than an easy Sheet Pan dinner? It’s not always easy to eat healthy or fresh when your schedule is packed, but this Harvest Sheet Pan Dinner is a great option for a busy weeknight.

Tips for preparing butternut squash and zucchini:

I washed the zucchini and butternut squash and cubed them both. I always cut the squash into smaller cubes because it’s harder and the zucchini cooks faster. To save myself from chopping off a finger, I poked some holes in the butternut squash and threw it in the microwave for five minutes. I have chopped them before without doing this and it’s seriously so difficult. The microwave doesn’t cook the squash too much, but it certainly softens it and makes it simpler to cut it up.

Spice up your 30-minute meal!

Garlic powder, onion powder, ground cumin, dried parsley flakes, cayenne pepper, and salt spice up this roasted dish. I tossed the chopped zucchini, squash, and  olive oil with the spice blend.

Smoked Turkey Sausage adds lean protein!

I sliced the turkey sausage and tossed it in as well. I put it all on a sheet pan and spread it around to make sure I had a single layer for more even roasting.

I baked it at 425ºF for about 25 minutes. I like my butternut squash pretty tender and after 25 minutes, it was perfect for my taste.

This is such a hearty but not too heavy meal. The skinless turkey smoked sausage comes out far less greasy than regular pork or beef smoked sausage and the flavor is smokey and delicious!

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients

  • 1 butternut squash
  • 1 large zucchini (or 2 small zucchini)
  • 1 tbsp extra virgin olive oil
  • 1 tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp ground cumin
  • ¼ tsp dried parsley flakes
  • 2 pinches cayenne pepper (or more to taste)

Instructions

  1. Preheat oven to 425ºF.
  2. Wash and cube the butternut squash and zucchini. Peel the butternut squash as you go.
  3. Toss cubes in olive oil and spices in mixing bowl.
  4. Add sliced skinless turkey smoked sausage and toss again.
  5. Lay it all out on a sheet pan in a single layer.
  6. Bake for approximately 25 minutes.
  7. Enjoy!

Notes

Home Chef Tip: To make the butternut squash easier to cut, poke holes in it with a fork, and microwave it until a little tender and easy to cut, about 5 minutes.
