My Sweet Potato Brownies are sure to disappear in a hurry! Loaded with rich chocolate goodness, creamy sweet potatoes, and natural honey, this festive treat is much more nutritious than traditional fudgy brownies!

This healthier treat is simple to make!

Start by peeling and chopping one large sweet potato into large chunks. Steam until tender.

In a food processor, combine soft sweet potato with the following ingredients:

  • 1/2 cup almond butter
  • 4 tbsp honey
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp vanilla extract

Once you have a smooth consistency, pour the batter into a prepared baking dish. Top with 1/3 cup of vegan mini-chocolate chips, then bake at 350ºF for approximately 35-40 minutes (or until an inserted toothpick comes out clean).

Notes

Home Chef Tip: If you want to add a layer of melted chocolate topping (instead of mini chips), place the chocolate chips in a microwave-safe dish, and nuke them in 30 second intervals until they're completely melted. Then, pour the chocolate over the brownies and use a spoon or spatula to spread it around.
