It can be hard to be healthy all the time, which is why cheat days are great. You can take a break from all the obsessing over calories or carbs and just enjoy food. Definitely, don’t binge eat, but choose one or two things that you would like to have as a cheat day treat.

The best option is definitely dessert on cheat day! Dessert can be downright sinful, but you can always make healthy swaps to make it a little better. One of the best desserts is definitely cookies! A classic, favorite cookie of mine is definitely the peanut Butter blossom. The richness of the peanut butter is definitely cheat-day worthy. However, you don’t have to waste all your calories on a peanut butter cookie! There is a way to make it healthier and lighter.

Use simple swaps like powdered peanut butter!

All you have to do is swap out the peanut butter for Powdered Peanut Butter to make it lower in calories. It has all the flavor of regular peanut butter, but it doesn’t expand that waistline. This dessert will be a hit with everyone. You can even decorate them depending on the holiday. Halloween can be orange and black, Thanksgiving can boast all the fall colors, Christmas can be red and green. There are so many different ways to decorate them, this is a year-round healthier dessert recipe!

Lightened Up Peanut Butter Blossoms

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 35 minutes

Ingredients

  • 1 + 1/4 cups all-purpose flour, separated
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 stick unsalted butter
  • 3/4 cup granulated sugar
  • 1/2 cup Swerve Brown Sugar
  • 1 large egg, at room temperature
  • 3/4 cup PBFit powdered peanut butter (or any brand of powdered peanut butter)
  • 1 tsp vanilla extract
  • 24 chocolate kiss candies, unwrapped
  • Optional: sanding sugar of your choice

Instructions

  1. In a large mixing bowl, add in flour, salt, and baking soda. Mix well and place on the side.
  2. Microwave butter in a microwave-safe dish for 15 seconds until soft, but not melted. Place butter into a stand mixer and beat for 1 minute.
  3. Add in the Swerve brown sugar and 1/4 cup of sugar to the mixture and continue to beat until well combined. Add in the egg, peanut butter, and vanilla. Mix well and scrape down the sides as needed.
  4. Slowly pour in the flour mixture and mix well until all is combined.
  5. Cover the bowl with plastic wrap and place in the fridge for at least 1 hour (you can leave it overnight if you make the dough late at night).
  6. Preheat the oven to 350ºF.
  7. Line a baking sheet with silicone mats or spray with non-stick spray.
  8. Remove the dough from the fridge. Scoop out a 1 inch sized ball of dough from the cookie dough and roll it into a perfect ball.
  9. Pour remaining 1/4 cup sugar into a small bowl. Take the ball of dough and roll it into the sugar until well coated. Place on baking sheet.
  10. Repeat these steps for all of the remaining dough.
  11. Bake for 8-10 minutes then allow to cool for 15 minutes. Once cool, take the Hershey kisses and place in the middle of the cookies.
  12. In order to prevent melting, place trays in the fridge or the freezer for at least 15 minutes.
