Peanut Butter Granola Apple Bites

Looking for a healthy after-school snack idea? These Peanut Butter Granola Apple Bites are a kid-friendly snack using sliced apples and good-for-you toppings. You can even make this healthy snack dairy and gluten free!

Need a gluten free after-school snack?

You can make these Peanut Butter Granola Apple Bites vegan and gluten free, if needed. Just make sure to use gluten free, vegan granola and dairy free chocolate chips! 

For this recipe, you can use any type of apple you like, but I recommend a large, sweet apple like a Honeycrisp, Fuji, or Pink Lady. For the granola, I like using granola with smaller clumps, since it’s easier to spread. I also love adding cashews and coconut flakes for a little extra texture! Feel free to get creative with your toppings.

Make your own granola instead of store bought!

You can also try making granola at home, like this healthy applesauce granola or paleo walnut granola! Making your own granola is a great way to keep the sugar in check. The apple provides plenty of sweetness, so you don’t need a super sweet granola recipe to make this snack a hit!

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 6 slices

Ingredients

  • 1 large red apple
  • 1 tbsp creamy salted peanut butter
  • ¼ cup granola
  • 1 tbsp mini chocolate chips
  • Coconut flakes & cashews for garnish (optional)

Instructions

  1. Slice the apple into 1/2” thick slices. A large apple should give you about 6 large rings.
  2. Use a paring knife to carefully remove the seeds from the middle.
  3. Smear each apple slice with a thin layer of peanut butter.
  4. Top with granola then sprinkle with chocolate chips and any other toppings you decide to use.
  5. Serve immediately!

Notes

Home Chef Tip: Top with any other toppings you'd like. Sunflower seeds and coconut flakes work great too!
