Tropical Pineapple Martini

This Pineapple Martini is a tropical twist on a classic cocktail. With real pineapple juice and vermouth, this vodka-based cocktail is the perfect adult-only summer refresher.

‘Tis the season for tropical cocktails!

Whether you’re planning summer parties or just want a fancy umbrella drink while you lounge by the pool, this simple Pineapple Martini is the perfect way to sip the summer away. Inspired by a classic cocktail, this pineapple cocktail is made with sweet vermouth and vodka, but the addition of pineapple juice (with a sugar rim for good measure) makes it feel like a whole new drink. You only need a dash of vermouth to get that martini-like feel, and the color is a beautiful yellow/amber. Topped with a pineapple slice and a little umbrella, I hope this cocktail transports you to a tropical island.

A classic cocktail with a tropical twist!

My favorite kind of cocktails are the super easy ones, and I think this fits the bill! The pineapple juice and sweet vermouth add plenty of flavor and sweetness to the drink so that there’s no need for additional simple syrups to make it a lightly sweet cocktail. I do think the addition of coconut vodka would make this Pineapple Martini taste even more special!

Shaken, not stirred!

Martinis always make me feel like I belong in a James Bond movie. I long to say, “I’ll have a martini, shaken, not stirred”.

In this case, a shaken pineapple martini is the best. It’ll be fresh and cool and ready to sip through a sugar rim.

How would you celebrate with a pineapple martini?

I think I’d like to be lounging on a beach with white sand and clear blue water. There’d be palm trees everywhere, and my tropical cocktail would be adorned with about 50 mini umbrellas. They always seem to make drinks taste better, don’t they?

Tropical Pineapple Martini

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients

  • 1 oz vodka
  • 1/2 oz sweet vermouth
  • 4-5 oz pineapple juice
  • Pineapple slices, optional (for garnish)
  • Sugar for rim, optional (for garnish)

Instructions

  1. If desired, dip the rim of a martini glass in pineapple juice, then coat with granulated sugar.
  2. Combine vodka, vermouth, and pineapple juice in a cocktail shaker with ice.
  3. Shake to chill, then strain into the prepared martini glass.
  4. Top with a slice of pineapple on the rim and a little umbrella for good measure!

Home Chef Tip: Take it up a notch by adding coconut liqueur or coconut vodka to make this cocktail taste extra tropical!
