Simple Cucumber Mango Guacamole

What I love about Guacamole is that it’s customizable. Whether you have picky eaters, spicy food fanatics, or just want simple avocado and sea salt, you can make it what you want. This summer spin on traditional guacamole is refreshing and nutritious. Plus, absolutely delicious. You can add what you want and leave the rest for next time. Try the recipe as is or play with it by adding tomatoes, lime juice instead of lemon, or sprinkling a dash of smoked paprika.

Lucky for us, we live in a day and age where we can get produce from any part of the continent at just about any time of year. Avocados are a hot commodity on our shelves and you can find mangos year round. If you can’t find fresh mangos, you can grab a bag of frozen mangos. They retain the flavor and nutritional value of their fresh counterparts.

At the store, you can find a small container of guacamole for BUCKETS of money. Making this recipe is a simple and affordable way to enjoy guacamole without it “being extra”. This recipe made enough for a family of 8 and cost less than $3.50. Leave that packaged guac on the shelf and make your own at home. It’s a great way to get the kids in the kitchen and make them a part of tonight’s dinner!

Cucumber Mango Guacamole

Prep Time: 10 minutes

Total Time: 10 minutes

Ingredients

  • 3 avocados
  • 1/2-1 tsp sea salt
  • 2 garlic cloves
  • 1 tsp cumin powder
  • juice of 1/2 lemon
  • 1/2 large cucumber (about 1 cup cubed)
  • 1/2 cup chopped mango
  • cilantro to taste

Instructions

  1. Carefully cut open the avocados and remove the pit.
  2. Cube the cucumber and mango and mince garlic cloves.
  3. Add all ingredients into a bowl and mash away.
