You can fill any open spots but pushing in leftover fruits and nuts into the cheese.

Nutty Cranberry Goat Cheese Log

Ingredients

  • 2 tbsp fresh rosemary, finely chopped
  • 1/4 cup chopped apricots
  • 1/4 cup chopped dried cranberries
  • 1/4 cup pecans, roughly chopped
  • 8 oz goat cheese log
  • 1 tbsp honey

Instructions

  1. In a small bowl, combine finely chopped rosemary, chopped apricots, chopped cranberries, and pecans.
  2. Place fruit and nut mixture on a flat plate.
  3. Carefully roll the goat cheese log into the fruit, nut, and rosemary mixture until all sides are covered. You may have to press some of the fruits and nuts into the goat cheese log with your hands to get it to stick.
  4. Refrigerate until ready to eat.
  5. Drizzle honey over the top before serving.
