French Vegetable Casserole | Tian

This colorful French Vegetable Casserole {Tian} is a 6-ingredient side dish that only requires 10 minutes prep time. A simple and healthy side dish that pairs beautifully with grilled meat or fish for a weeknight dinner that’s out of this world!

Vegetable French Tian

I’m in love with this simple yet elegant and healthy French Vegetable Casserole. The official name for this healthy side dish is Provencal Vegetable Tian. The main ingredients are eggplant, zucchini, and tomatoes. Garlic, onions, potatoes, and herbs can be added too.

Thinly-sliced vegetables are arranged in alternating rows in a casserole baking dish, drizzled with olive oil, sprinkled with herbs and seasoning, and baked until the veggies are tender. No white sauce, breadcrumbs, or cheese are used here.

Simple ingredients that everyone has on hand produce this healthy, juicy, and delicious side dish that can be served for any occasion.

Just like my Eggplant Gratin that I love making all year long, this French Tian can also be prepared at any time of the year. Since it’s a dish where vegetables are the major players, make sure to pick the freshest and the ripest ones you can find.

How to make French Vegetable Casserole:

To make this French Vegetable Casserole, all you’ll need is baby eggplants, zucchini, tomatoes, garlic, a few sprigs of thyme, olive oil, salt, and pepper. Start off by thinly slicing the vegetables in 1/4-inch thick slices. You can also use a mandolin if you have one. If you use an older or large eggplant, I’d recommend removing the skin first as it can be a bit tough.


Arrange vegetables in alternating rows in a 7.5″ x 6″ rectangular baking dish.

Sprinkle with salt and pepper and put a few sprigs of thyme on top. If you have Herbs de Provence, you can sprinkle a teaspoon or so over the veggies as well.

A healthy side dish with only 10 minutes prep time!

Drizzle with a few tablespoons of olive oil and bake uncovered at 400ºF for 30-35 minutes or until vegetables are tender.

So easy, it’s almost effortless. Just 10 minutes prep time and the oven will do the rest of the work.

Provencal Vegetable Tian is best served warm and pairs great with steak or any other grilled meat or fish. You can also make it as a quick weeknight side dish to go along with your main meal. Ingredients

  • 2 baby eggplants
  • 2 medium zucchini
  • 2 medium ripe tomatoes
  • 2 garlic cloves, thinly sliced
  • 5 sprig of thyme
  • 3 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400ºF.
  2. Thinly slice eggplants, zucchini, and tomatoes in 1/4-inch thick slices.
  3. Arrange vegetables in alternating rows in a 7.5" x 6" rectangular baking dish.
  4. Sprinkle with sliced garlic and scatter thyme sprigs on top.
  5. Season vegetables with salt, pepper, and a drizzle with olive oil.
  6. Bake uncovered for 30-35 minutes or until vegetables are tender.
  7. Serve immediately!

Notes

Home Chef Tip: For this recipe you can use any vegetables you have on hand. Potatoes, Squash, and sliced red onions also work well.
