Elote Dip | Hot Mexican Street Corn Dip

If you’re hosting happy hour at home or throwing a tailgate party, you need this Elote Dip on the menu. Just like Mexican Street Corn, but in dip form, this is a 15-minute appetizer. Sautéed corn, cilantro, garlic, chili powder, Cojita, and mayo make the best dip at the party!

What is Elote?

Elote means “corn on the cob” in Spanish, but mostly it is known as Mexican Street Corn. The corn is coated in a mixture of cilantro, garlic, chili powder, Cojita, and mayo, and then grilled and served with a lime wedge.

Ever since I had Elote on last year’s cruise to Ensenada, I have been obsessed with it. I love Mexican Street Corn, but sometimes corn kernels get stuck in my teeth which is why I prefer to eat it as a dip with a spoon or chips.

This Elote Dip takes just minutes to throw together. It is amazingly creamy with a hint of spice and tanginess. It’s the perfect dip for unexpected guests, tailgate parties, or happy hour at home. It’s budget friendly too so it’s great for serving to a large crowd!

Elote Dip | Hot Mexican Street Corn Dip

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients

  • Whole kernel corn (I prefer fresh, but you can use frozen or canned)
  • Onion (I love green onions, you may use any)
  • Jalapeños (Optional)
  • Mayo (You may use Greek yogurt, sour cream, or cream cheese)
  • Fresh cilantro
  • Garlic
  • Crumbled Cotija or Queso cheese
  • Lime juice
  • Chili powder
  • Tortilla chips for serving

Instructions

  1. Chop cilantro, jalapeño, onion, and garlic. Set aside.
  2. Sauté the corn kernels and chopped garlic in a little bit oil, cook until it gets a little bit caramelized.
  3. Mix everything together until well combined.
  4. Add the seasoning, mayo, and mix one more time.
  5. Serve with tortilla chips and enjoy!

Notes

Home Chef Tip: If you can't find Cotija or Queso, use parmesan cheese instead.
