Summer could not come soon enough! As an Australian living in the rainy PNW, I get very much over the long, rainy, gloomy days. I thrive off sunshine, and thrive off summer foods. Everything in the summertime feels better. The food is fresher, the days are longer, the air is cleaner, and everything feels refreshed! I am so excited for this summer for a number of reasons, but mainly because we have grown grass in our little dirt patch yard, which means…summer outdoor entertaining!

What’s your favorite thing about outdoor entertaining?

I love summer entertaining. I enjoy having friends around for barbecues and love providing massive fresh and healthy, farmers market salads and light desserts. I also like to keep things simple, because frankly, if I’m entertaining, I want to actually spend time with my friends rather than having to worry about spending all afternoon in a hot kitchen.

That’s why, when it comes to outdoor entertaining, a killer salad is necessary! Summer backyard entertaining comes down to a few things: a couple of amazing salads, some sausages or burgers, a few appetizers, a pitcher of cocktails or sangria, and a light dessert. I personally think a salad makes or breaks a backyard party, which is why I am bringing you this grilled stone fruit salad!

Grilled Stone Fruit Salad

If you’re hosting a barbecue, you want some super fresh salads that draw your guests in. A few simple flavors and a bunch of color can really go a long way! No one likes boring salads, so that’s why it’s essential to jazz up your salad repertoire. This grilled Stone Fruit Salad is a simple salad that makes a lasting impression. It’s fast, fresh, and so colorful, you can’t help but smile when you look at it!

For the salad, I used a combination of fruits and vegetables and paired them with creamy goat cheese, crunchy pine nuts, and spicy arugula. The flavor combination comes together beautifully. The balsamic glaze and honey tie it all together to create a perfectly-balanced salad. If you can’t get access to watermelon radishes, regular radishes will work just fine and are just as pretty!

Grilled Stone Fruit Salad

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 6

Ingredients

  • 2 nectarines, seeds removed and sliced into 8 pieces
  • 2 tsp honey
  • 1 tsp olive oil
  • 1 watermelon radish, very finely sliced (or 3 small red radishes, finely sliced)
  • 2 oz goat cheese
  • 3 cups fresh arugula
  • 1/4 cup pine nuts
  • balsamic glaze for drizzle

Instructions

  1. Heat a grill pan over high heat.
  2. Place honey, olive oil, and sliced nectarines in a bowl and mix together.
  3. Lay nectarines on grill pan, and cook each side around 4 minutes, or until dark grill marks appear, then flip and repeat.
  4. Meanwhile, lay arugula on a long, flat serving plate or salad bowl.
  5. Neatly arrange watermelon radish over the arugula.
  6. Next, arrange the grilled nectarines.
  7. Top with goat cheese, pine nuts, and drizzle with balsamic glaze.
  8. Serve immediately and enjoy!

Notes

Home Chef Tip: If you can't find nectarines, peaches or apricots would make a good alternative. You can also use a barbecue to grill the stone fruit as well as a hot grill pan on the stove.
