Deli-Style Twisted Reuben Sandwiches

Is it just me or is there nothing more comforting than a deli-style sandwich piled high with your favorite ingredients? The possibilities are endless and while sometimes I just love a PB and J for lunch, when I really want to get crazy, I make these Twisted Reuben Sandwiches. They’re simple to put together in about 10 minutes and they look like they came straight out of the deli counter!

Once a week, I hit up our local deli so that I can stock up on deli meats and cheeses for the week for the family’s lunches. There are three to be packed each morning and I like to switch up the rotation of sandwich offerings so my kids and husband aren’t getting lunchtime boredom. We all love a great deli-style meal, but I need for our meals to be budget friendly, so making our lunches at home is key!

Twisted Reuben Sandwiches

These Twisted Reuben Sandwiches come together in a snap and the combination of flavors is absolutely delicious. Garlic aiolli, roast beef, and creamy havarti cheese are quite the trio!

Start by making the garlic aioli, which is just a matter of whisking together mayonnaise, garlic, seasonings, olive oil, and a fresh squeeze of lemon juice. Spread the garlic aioli onto each side of thick, hearty seed bread (and don’t be stingy). Then top with deli roast beef, spinach leaves, and thick slices of havarti.

I make it easier on myself in the morning and create an assembly line of ingredients and make all the sandwiches at once, including my own. That way when it’s time for lunch, I already have a sandwich waiting for me in the fridge. During my lunch hour, I love to pair my Twisted Reuben Sandwiches with a cup of soup or in this case a bowl of fruit. It’s the perfect lunch any day of the week!

Twisted Reuben Sandwiches

Serving Size: 1 sandwiche

Ingredients

  • 1/2 cup mayonnaise
  • 2 cloves garlic, finely minced
  • 1/4 tsp kosher salt
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 8 slices sprouted grain bread
  • 1 lb deli roast beef
  • 1 cup fresh spinach leaves
  • 4 slices Havarti cheese

Instructions

  1. In a small bowl, mix together mayonnaise, garlic, salt, olive oil, and fresh lemon juice.
  2. Spread garlic aioli onto each slice of bread.
  3. Top with roast beef, spinach leaves, Havarti cheese, and the top slice of bread.
  4. Slice sandwich in half and serve.

Notes

Home Chef Tip: Substitute spinach leaves for arugula, romaine, or shredded iceburg lettuce.
