In a rut with your lunchtime routine, but don’t have a lot of time? This simple recipe for Avocado Chicken Salad is the healthier classic you’ve been craving. Just seven on-hand ingredients and moments to prepare, your light lunch is served!

Office lunches get a bit of a bad rap. Between stinky microwave meals, fast food, or just skipping it all together, the office can be a tricky place to feed yourself a healthy, simple lunch that also tastes good. This simple Avocado Chicken Salad is incredibly tasty and a better-for-you office lunch solution. Not only is it a healthier classic that uses no mayonnaise, but it’s a cinch to whip up in even the tiniest of office lunchrooms or right at your desk in just a few quick minutes.

Avocado Chicken Salad without Mayonnaise

Start with a can of precooked, shredded Chicken.

Add half of an avocado that’s been diced.

Then add in some minced onion, parsley, celery, juice from half a lime, kosher salt, and cracked black pepper.

Mix it all together using a fork.

This simple Chicken Salad can be enjoyed straight from the bowl, spread over your favorite crusty bread, or inside a romaine leaf.

The avocado adds a delicious creaminess while delivering a healthy dose of good fats to your body. The fresh celery adds some texture while the lime and onion pack it with plenty of flavor. Keep carbs to a minimum by eating this salad by itself or for even more crunch, enjoy it spread inside of a romaine leaf taco-style.

This recipe is versatile and can easily be customized to flavors you love. Prefer Asian cuisine? Add sesame seeds and ginger. Love sweet and salty? Toss in some diced apple. Live for Mexican flavor? Mix in some tomato and jalapeño.

Packing a can of chicken, an avocado, and a few seasonings you measure out in a zip bag makes this lunch easy to transport to work for a quick midday meal that’s fresh and delicious. You can whip it up in under five minutes saving yourself valuable time and helping you maximize that lunch hour!
