As a military family, we’re accustom to spending the holidays with friends. Since my husband will be deployed this holiday season, my girlfriends and I will be celebrating our very first Friendsgiving together. Instead of the traditional Friendsgiving dinner, we’ve decided to switch it up and turn this joyous occasion into a casual Friendsgiving Brunch.
I couldn’t ask for a better opportunity to dine with great friends while enjoying all of our favorite breakfast dishes. We will drink Mimosas while we fill our bellies with delicious food and laugh until our cheeks hurt. There will be muffins, frittatas, and this scrumptious Cream Cheese Pumpkin Spice Crumb Cake.
Full of fall flavors in every bite, this crumb cake will definitely become a Friendsgiving brunch favorite. It starts with a moist pumpkin cake, layered with Cream Cheese, and topped with a pumpkin-spice streusel. But it doesn’t stop there. Drizzle with a vanilla glaze and you’ve got yourself the perfect brunch companion.
Trust me when I say this crumb cake will not disappoint! Your friends will be begging you to bring this to every brunch from this point forward. In fact, it’s so yummy you can even add ice cream for a decadent dessert. Say goodbye to your traditional pumpkin pie, there’s officially a new guy in town!
Cream Cheese Pumpkin Spice Crumb Cake

Ingredients

    For the streusel:
  • 3/4 c flour
  • 1/4 c brown sugar
  • 1/4 c granulated sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 6 tbsp butter, melted
  • For the cake:
  • 2 c flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 c pumpkin purée
  • 1/2 c oil
  • 1/2 c brown sugar
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla
  • 1/4 c milk
  • For the cream cheese:
  • 8 oz cream cheese, room temp
  • 1/4 c sugar
  • 1 egg white
  • 1/2 tsp vanilla
  • For the vanilla glaze:
  • 2 c confectioners sugar
  • 3-4 tbsp heavy cream
  • 1 tsp vanilla

Instructions

    For the streusel:
  1. In a small bowl, combine all ingredients and mix well. Texture will be lumpy, set aside.
  2. For the cream cheese:
  3. Combine all ingredients well, until the texture is smooth. Set aside.
  4. For the cake:
  5. Start by preheating the oven to 350ºF. Line the bottom your 8 inch spring foam pan with parchment paper, and spray the sides with non-stick spray.
  6. In a medium-sized bowl, combine the oil, sugar, egg, pumpkin, vanilla, and milk. Set aside.
  7. In a larger bowl, combine the flour, baking soda, baking powder, salt, and spices. Pour the wet ingredients into the dry ingredients and fold until well combined. Try not to over mix.
  8. Take your greased spring foam pan and pour half of the cake mixture into the pan. Now, take the cream cheese mixture and pour over the cake mixture. The cream cheese will not cover the entire area, that's OK. Next, pour the remaining cake batter over the cream cheese.
  9. Now add the crumb topping, lightly pressing into the cake.
  10. Bake for about 30-35 minutes. Let cool, then add the vanilla glaze.
  11. For the vanilla glaze:
  12. In a medium-sized bowl, add the vanilla to the confectioners sugar. Add one tablespoon of heavy cream at a time until you've reached desired consistency.

Notes

Home Chef Tip: Although I prepare this as a brunch recipe, it's decadent enough to serve topped with ice cream for dessert.

This recipe is so simple even the little ones can help out! Just mix, layer, and bake! No mixer required. The only hard part about this recipe is waiting for it to cool before digging in. Although the cake is scrumptious on it’s own, I truly believe the vanilla glaze makes this recipe top notch! There is just something about the combination of vanilla and pumpkin that makes me weak in the knees.
