Spiralized Citrus Beet Salad Recipe

As the summer days come to a close and everyone heads back to school, it seems like the sun didn’t quite catch that memo! Hot evenings mean I’m still not inclined to turn on my oven and heat up the house to prepare dinner. I need something that is going to be filling, but doesn’t require a ton of work. In order to make meal times quicker during the week, I spiralize and prep my vegetables on Sundays, so I can literally grab-and-go when it’s time to cook after a hectic work day. It saves me time and sanity.

Spiralized Citrus Beet Salad Recipe

We are huge fans of the spiralizer at our house, which takes eating vegetables to a whole new level of fun! If you’ve never heard of spiralized vegetables before, it’s a machine that takes your veggies and turns them into “noodles”, or spirals. Trust me when I tell you – you need one! It takes an average meal and turns it into a work of art. They have all sorts of blades for thick, thin, ribbon-style, and more!
This Spiralized Citrus Beet Salad is a perfect example. An ordinary mixed greens salad with chopped beets and feta turns into a small work of art…complete with homemade citrus vinaigrette!
Spiralized Beet Salad

Ingredients

    For the salad:
  • 4 heaping handfuls of mixed greens
  • 2 beets, cooked and spiralized
  • 1/4 cup yellow onion, thinly sliced
  • 1/4 cup feta cheese
  • For the vinaigrette:
  • 1 minced garlic clove
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1/2 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil

Instructions

  1. Place mixed greens in a large bowl.
  2. Arrange spiralized beets in the center.
  3. Place sliced onions around beets.
  4. Arrange feta in the center of the beets.
  5. Add remaining ingredients to a small bowl or lidded jar.
  6. Whisk or shake to combine completely, serve vinaigrette on the side.

Notes

Home Chef Tip: If you want to add additional protein to this meal, a nice piece of grilled chicken is the perfect hearty compliment.

To recreate this salad, head to your local supermarket, hit up the produce section, and let’s get to work. If you can’t find feta to top your salad, I recommend goat cheese instead. You can’t go wrong with either one, but I don’t recommend omitting it entirely. The sharp cheese provides the contrast your palate needs against the greens, onions, and beets. I like to top this salad with a simple citrus vinaigrette that pulls the flavors together and creates a tangy twist to the beets. Serve it on the side for guests to enjoy at their leisure.
