Copycat In-N-Out Burger Recipe

Well, unless you’ve had an In-N-Out burger, it’s hard to describe just what’s so fabulous about the burger. Is it the perfectly toasted bun? Is it the “secret” sauce they spread on the inside of the burger? Or maybe it’s the thin, yet fatty patty that they include in the center? Die-hard fans of the fast food joint will you tell it’s all of the above. Most people will agree it’s the perfect combination of those ingredients, and the perfect ratio of each.

In an effort to share the In-N-Out love with everyone across the nation, we attempted to recreate this famous burger at home and have shared the recipe here. While a knockoff will never be the real deal, this Copycat In-N-Out Burger Recipe comes pretty close. Whether you like your onions grilled or not, or you want to double stack this burger to make it the famous In-N-Out “double double”, that’s your choice. In any case, we definitely recommend switching it up by swapping out your usual burger for this California gem.

Copycat In-N-Out Burger Recipe

Ingredients

  • 1/2 lb ground beef (73/27)
  • Salt and pepper for beef
  • 4 hamburger buns (potato or brioche are preferable)
  • 4 iceberg leaves
  • 4 slices of tomato
  • 4 slices of onion
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon pickle juice
  • Unsalted butter, for the pan

Instructions

  1. Divide the ground beef into 4 pieces. Shape each piece into a round ball, then flatten into a very thin patty. Try to flatten the patty as much as you can without it breaking apart. Sprinkle a small pinch of salt and pepper over both sides of each patty.
  2. Warm a large, non-stick pan over high heat. Add the patties to the pan and turn the heat down to medium-high. Cook patties on one side for about 2 minutes, just until it begins to char, then flip over and cook for another minute or so. The patties are thin so they don't need too long to cook through.
  3. Butter a separate pan, and toast the burger buns in this pan for about 30 seconds to 1 minute, until they're slightly crisp and warm.
  4. In a small bowl, whisk the mayo, ketchup and pickle juice together to combine. Smear this spread over the bottom half of each burger bun. Place a warm patty on top of the spread. Layer the iceberg leaves, tomato, and onion over each patty, then top with the remaining bun.

Notes

Home Chef Tip: To turn these into cheeseburgers, simply add a slice of cheddar cheese to each patty after you've flipped them over to cook on the second side. The cheese will melt onto the patties.
