Biryani Bombs Appetiser Recipe

I frequently get queries, recipe request, for appetiser/party snack. If its a phone call from a friend,  I mostly start with the list of foods present in the fridge, and accordingly, I suggest a recipe. Making an interesting dish, using the leftovers in the fridge, gets more appreciative words from the other end of the phone. This biryani bomb recipe is one of those ideas which have been constantly winning the appreciative words. The surprise factor, in the centre of each biryani bomb, makes it more interesting. 

Can you guess, without reading further, what possibly can be in the centre of each biryani bomb? 

 

I know, how it feels, when standing with the fridge door open and juggling between ideas. Especially when you have friends/ guest coming over. Try this recipe and I promise, you will have fun making it. And of course, if biryani is your favourite food, you will relish eating / indulging in. 

Its interesting, and I won’t say, easy… because there is a little process required to make these bombs perfect. And I won’t consider this recipe as a difficult recipe too, because you can make it, (nothing like a rocket science). Just require a process to get it right. Let me take you through some points, without confusing you any further. 

By the way, have you guessed? what’s in the centre of the biryani bombs.  – It is hung yoghurt raita in the middle. Tadaaaaa. Getting the yoghurt raita in the centre is the trick. Imagine that crispy golden crust outside and soft creamy yoghurt raita in the centre along with very aromatic hot biryani. Just wonderful.

This is how:

Take hung yoghurt, (make sure it’s thick enough). Use a wire whisk to make it smooth. Add seasoning, roasted cumin powder and mix well. You can also add some chopped green chillies along ( if prefer spicy ) 

Pour this yoghurt mix in a shallow container and freeze it. Once its frozen cut it into cubes and insert one in each bomb when shaping the biryani bombs. 

You need to take care of:

1. Maintain the temperature, of frozen yoghurt during the process. Cut it into pieces and keep in the freezer again. 

3. Take a small portion of mashed biryani on the palm of your hand, keep one piece of frozen yoghurt raita in the centre and seal it, using some more rice. 

4. Gently roll it into round shape and dip it in a thin flour batter and coat with breadcrumbs. Immediately deep fry in the hot oil. (It is important to fry in hot oil, so the yoghurt doesn’t seep out.

5. If you can have some help in making these biryani bombs, it would be great. One person can shape them and other can take care of the frying process. 

Cheats Biryani 

This biryani bomb is something, you can make of plain cooked rice also. Assuming you have plain cooked white rice. 

You turn them into biryani (cheats Biryani)- Saute some onion garlic ginger add some vegetables (I prefer grated carrots and partiality mashed peas) of your choice. And add few drops of Ossoro Afghani biryani flavour. Ossoro Afghan Biryani Mix, 30ml, Culinary EssenceOssoro has this very amazing/ excellent Afghani biryani flavour. 

It’s rich, full of aroma, packed with authentic flavours. Few drops turned my plain rice into an amazing Afghani Biryani. This makes kitchen life very easy. 

Ingredients 

2 cups of cheats biryani 
Ossoro Afghan Biryani Mix, 30ml, Culinary Essence

1/2 cup of hung yoghurt 

seasoning for yoghurt 

Salt, pepper, roasted cumin powder, dry mint powder

Oil to deep fry 

1/4th cup of all-purpose flour 

1/2 a cup of breadcrumbs 

Method 

In a bowl whisk hung yoghurt along with the seasoning. Pour it into a shallow tray and freeze for 5-6 hours. 

Once the yoghurt sets, cut it into small pieces and freeze again. 

In a bowl mash the leftover biryani or cheats biryani. Take a small portion of mashed biryani on the palm of your hand, keep one piece of frozen yoghurt raita in the centre and seal it, using some more rice. 

Gently roll it into round shape and dip it in a thin flour batter and coat with breadcrumbs.   immediately deep fry in the hot oil. (It is important to fry in hot oil, so the yoghurt doesn’t seep out.

Serve hot with homemade chutney and enjoy!
