If you’ve already caught onto the kombucha craze, I applaud you! But if not, I’ll be the first to admit that just a little more than a week ago, even I had absolutely no idea what this stuff was, or why there is such a fuss over it!

Kombucha is a fermented tea that is slightly fizzy and can be customized with many different fruits and herbal flavorings. I love it because it contains healthy bacteria and yeast cultures that work sort of like probiotics to support a healthy gut. That’s why it’s considered a “functional food” and why the Paleo community comprises some of its biggest fans. The process to make it is pretty straightforward; the only challenge is getting hold of the yeast culture mix (called SCOBY). If you live in the US, you can easily order it online (get this one from Amazon – the cheaper ones often break in the mail) or perhaps even buy it at your neighborhood health food store. If you can get your hands on some, the rest is pretty easy. So go find some SCOBY and then have a look at the myriad ways to make your kombucha taste great! Josh has a thorough and easy-to-follow instructional post on how to make Kombucha at home. His photos also provide a clear picture into the process of making the stuff so if yours looks weird, you can rest assured that it looks the way it’s supposed to. He also provides some good ideas for fruit flavors and mixes to give your kombucha a great taste! Don’t be shocked by the inclusion of regular sugar in the recipe. This may seem very un-Paleo but sugar is necessary to feed the bacteria and they eat pretty much all of it. I’ve even seen kombucha on sugar-detox diet plans so don’t worry, you’re safe! Here’s another great How-To guide from Sonia, the Healthy Foodie. She makes her kombucha taste great by including cranberries, chai spice, ginger and honey. YUM! She gives very detailed instructions and warns against the one mistake that could make a volcanic kombucha eruption occur in your kitchen.
