Chicken Avocado Salad with Cilantro and Lime

Using the cucumber to make ‘cups’ to serve the salad in is a great idea and goes down well at parties. Using a potato peeler, carefully peel sections of the skin off, leaving you with a striped effect, then slice the cucumber and place it round the edge of the plate for a lovely centrepiece.

Easy Mango and Chicken Salad with Coconut Caesar Dressing

If you don’t have the herbes de provence, then this will work just as well either without herbs, or using some that you do have.

The chicken legs in this recipe will release enough liquid to form a ginger sauce at the bottom of the dish which can then be spooned over the finished meal. If you like the legs to be brown when you serve them, take the lid off for the last 15 minutes of cooking.
