How to Cook Patis Fried Chicken

Patis Fried Chicken is a very uncomplicated, undemanding recipe. You don’t need many ingredients for this dish, and the frying process itself takes little to no time!

In fact, most of your time will be going into the process of marinating your chicken. You have to make sure that your chicken has enough time to soak up all your delicious flavors. Speaking of –– before you start cooking, cut up your meat into serving pieces for your own convenience.
Once you’ve cut your chicken up into serving pieces, arrange them in a large bowl. Add in patis or fish sauce and a quarter teaspoon of ground black pepper. Mix your chicken together in the sauce and pepper, then let it marinate. This should take about half an hour.

In the meantime, combine your all purpose flour and cornstarch into one large container. Mix these two together, incorporating until they’re well blended. Also add water, egg, and remaining patis. Mix well.

Now is also the time to heat your cooking oil up in a pot; you’ll need about 2 cups. Make sure that your oil is hot enough for the chicken to fry in.

Now that your batter is ready, take your cut up chicken and dip it in your batter You have to ensure that you’ve covered all parts of the chicken thoroughly and evenly.

It’s now time to put your fried chicken in a pot. The average piece of fried chicken needs to be fried for about 14 minutes –– if you’re using a pan, that’s about 7 to 8 minutes per side. Ingredients

  • 1 ½ lbs. chicken cut into serving pieces
  • 5 tablespoons patis fish sauce
  • 4 tablespoons all-purpose flour
  • 4 tablespoons cornstarch
  • 1 piece egg
  • 3/4 cup water
  • ¼ teaspoon ground black pepper
  • 2 cups cooking oil

Instructions

  • Arrange chicken in a large bowl. Add the 3 tablespoons patis and ground black pepper. Mix and marinate for at least 30 minutes.
  • Combine flour and cornstarch in a large container. Stir until blended. Add egg, water, and remaining patis. Mix well.
  • Heat oil in a cooking pot. Dip the chicken in the flour mixture.
  • Fry for 14 minutes or until the internal temperature registers at least 165F.
  • Remove chicken from the pot. Let it cool down for 10 minutes. Transfer to a serving plate. Serve with rice.
