Growing up, my mom always made Cilantro chutney. It was on the dinner table and we would add it to any dish for extra flavor. She would add fresh cilantro, green chili pepper, water, and salt. I was browsing through recipes, and instead of using basil pesto I decided to use cilantro as a base. I mixed in some lime and I love the flavor! I'm very happy with how the chicken turned out!
Possibilities: tacos, lettuce boats, salad, wraps, fried rice
Ingredients:
- chicken breast
- 1 cup cilantro
- onions
- lime
- garlic powder
- 1 tbsp olive oil
- 1-2 tsp honey
- salt and pepper to taste
- jalapeno (optional)
- In a small food processor, add cilantro, ½ to 1 lime squeezed, garlic powder, olive oil, honey, salt & pepper, jalapeno. Add 2 tbsp of water. Blend and set aside.
- Dice chicken breast and place in a zip-lock bag.
- Add the cilantro-lime chutney to the zip-lock bag for three hours or overnight.
- Grill when ready!
