christmas cookies – cinnamon scroll cookies

wow time flys and christmas is around the corner, unbelievable! of course Christmas Cookies are a must for the festive season. like every year, end of november i kind of lock myself in the kitchen for 1-2 days and bake all cookies at once. this year additionally to my favorites chai cookies and florentines, i baked 5 new kinds of christmas cookies. of course you can find a variety of different christmas cookies on the blog, so everyone should find something to their liking. first i am sharing this recipe for Cinnamon Scroll Cookies with you. every since i’ve been to stockholm two years ago, i can’t pass up a cinnamon scroll. although they don’t contain any chocolate, i’ve fallen for this pastry. so you can imagine how delighted i was seeing this recipe. to get the typical cookie crunch and so they keep longer (hahaha), they are based on shortcrust and just like their eponym are filled with a cinnamon sugar mixture. the smell in my kitchen – heavenly!!

ingredients (about 45-50 pieces)

  • 100 g soft butter
  • 50 g cream cheese (i prefer philadelphia)
  • 50 g sugar
  • 1 package vanilla sugar
  • salt
  • 1 egg yolk
  • 200 g flour
  • 1/2 tbsp baking powder
  • 50 g brown sugar
  • 1 teaspoon cinnamon powder

with a handheld mixer whisk butter, cream cheese, sugar, vanilla sugar and a pinch of salt until creamy.

mix in yolk. add flour and baking powder and knead in with the dough hook of your handheld mixer. or you can put all ingredients in your food processor and let him do all the work. on a piece of cling wrap form the dough into a flat rectangle and wrap with foil. put in fridge for 1 hour.

melt 25 g butter. mix brown sugar with cinnamon. on a floured worktop roll out dough into a 40 x 25 cm rectangle. spread thinly with butter and sprinkle evenly and generously with cinnamon sugar. roll up firmly from the long side. wrap in cling wrap (maybe cut in half if too long) and place in fridge for 30 min.

preheat oven to 190°.

with a sharp knife cut into 0,5 cm slices, place on a baking tray lined with baking paper. bake each tray separately for 12 min on middle rack. let the cinnamon scroll cookies cool down on the trays. store in an airtight container.
